Food business: Start your own or franchise?

Food business is absolutely a great business to start. With the reality that people becomes hungry and needs to eat. Food business will surely be a big hit. Since I am just a newbie, I would want to start it small. Public markets and shopping malls also see a great profit in this. People often tend to buy in stalls because of its affordability and fast service. A snack chart, kiosk or stall would be enough for my capabilities and budget. A soft serve ice cream or a waffle cart business would be better. I have seen a lot of successful small food businesses, which made me positive in entering this business as well. I noticed, almost seventy percent of them are franchised. Does it mean that I need to franchise as well? I know there is a great edge in franchising and it would mean lesser hassles in setting up. From stocking to stall building, they would definetly do it for me. But budget wise, it would be too costly. Imagining franchise fees and royalty fees makes me think twice. An additional $200 to $400 capital and 10 percent monthly royalty would mean a lot. I could start that amount into something more for the business. I am skeptic. I do not know what to choose. Franchise or starting my own name both has advantages and disadvantages. I must confess that I am leaning more over starting my own. This is just my first step. I hope I am really qualified for kind of venture.
